Dark meat is better. Why don't we love it more?

Not being a postmodernist I wouldn't call the overwhelming American preference for white-meat turkey a form of cultural hegemony. More like a mass hallucination. Why, for instance, hasn't white meat shared the same fate, the same cultural disenfranchisement, as packaged white bread?
Some of you may remember white bread. Not the white bread of crusty baguettes and the like, but the white bread of sliced, standardized loaves of cotton wool, the stuff people ate before everyone switched to baguettes and focaccia and brioche, which are, yes, often "white" but not "white bread" in the old-fashioned, mass-produced sense. I'm talking about Wonderbread bread.
This is what I can't understand: Why does most of America want its turkey meat white? ...
Why have we broken the chains of the whiteness that bound us to fatally tasteless white bread while still remaining imprisoned in the white-meat turkey ghetto?
... Do they still associate white meat with refinement? It was enough to make me wonder whether there could be a racial, if not racist, subtext here. Perhaps there is a clue in the shifting fate of the "other white meat"—pork. I'll never forget the moment when I learned the antebellum racial origin of the phrase "living high on the hog." I had driven down the I-5 "grapevine," that fog-shrouded mountainous interior route from San Francisco to L.A. with a couple of Communist Party women who were mothers of death row prisoners (long story). When dawn broke and we arrived in Watts, they guided me to a place called Ray's Redwood City, an all-night, almost all-black joint where the ladies of Saturday night dined with the ministers of Sunday morning (not at the same tables), and my fellow travelers ordered me a dish called "high on the hog," a mountain of scrambled eggs topped by a fried pork chop.
It was then I learned the etymology of the phrase in America. It hails from the plantation days, when the white slave owners dined on choice pork chops cut from "high on the hog" while the slaves made do with the lower parts of the pig—the ham hocks, the pigs feet, the pork bellies, and the innards. White meat was high on the hog, but not higher on flavor than other (often darker) cuts. Indeed the "other white meat" now available most frequently in lean and tasteless pork chops and cutlets has little more taste than white meat turkey.
Despite its superior taste, dark meat has dark undertones for some. Dark meat evokes the color of earth, soil. Dark meat seems to summon up ancient fears of contamination and miscegenation as opposed to the supposed superior purity of white meat. I guess it shouldn't be a surprise that white meat remains the choice of a holiday that celebrates Puritans.
Indeed, the connotations of the pale and darker parts of the turkey constitute a meaty metaphor for the Thanksgiving feast itself. The allegedly more refined and daintier white parts, the wings and breast, have never touched the ground the way the earthier darker legs have done. And you know how dirty dirt is.
By the way, if you want to read a brilliant poetic embodiment of the real story of our "Pilgrim fathers," a chilling antidote to white bread, white meat, and Thanksgiving treacle, I recommend you take a look at Robert Lowell's amazing, chilling poem "Children of Light" (which could have been called ("Children of White").
Its opening lines represent the best unsentimental epitaph for the myth of Thanksgiving:
Our fathers wrung their bread from stocks and stones
And fenced their gardens with the Redmen's bones.
Maybe that's why I have a prejudice against the white-meat sacrament of the holiday that covers up the white man's crimes.
It's Lowell writing about his pilgrim ancestors who began the rolling genocidal slaughter of those nice Native Americans who made the first Thanksgiving possible.
The real Thanksgiving story is extremely dark, far darker than any leg and thigh meat.
Could fear of facing our dark history be behind the prejudice against dark meat?

People started eating whole wheat Rye etc. when the health craze started in the 70s and people got exposed to more and better breads which used to be only available in Big Cities or ethnic enclaves.
White poultry meat is more healthy and assuming its cooked correctly (and still moist) tastes better than dark poultry meat.

By comparison there's no social ritual for carving a capon / chicken... And we see the result.

Is this parody? Anyway, if he had bothered to research the origin of the term "high on the hog" rather than just accepting as truth the Karl Marx version from his CPUSA comrades, he would have discovered that it was indeed used as he described, but not only in slave states but also in free ones, where the affluent white citizens ate better cuts of meat than the poor (whites). An alternative explanation involves the feeding practice of piglets. But it probably did not originate there - the phrase has been traced back to 17th century Ireland and England. I read the linked previous article about Bernie Madoff too, and it's almost as bad. True , Madoff is disgusting, but Rosenbaum misses one key distinction - Madoff is a thief, as were the old-time Jewish gangsters, but they killed a lot of people, which, as far as I know, Madoff never did.

The problem with dark meat isn't the taste; it's the lack of uniformity and predictability. With dark meat you have to watch out for tendons.

In the past 20 years, every talk show host, magazine and radio announcement had told us to switch to dark breads and lean meats.

The only thing that has less taste than white poultry meat is hard boiled egg white (because it is even more pure protein - and pure denatured protein has no taste; that's just how our taste receptors work). Here we only eat red meat. The unfortunately large amount of white meat goes as a filler into something that does have taste (soups, salads).

In our fatass society, people watch what they eat. Dark meat has more fat content than white meat. So, many people avoid white bread and dark turkey meat for the same reason.
ReplyDeleteAnother reason white turkey meat is favored is because Thanksgiving turkey isn't eaten just for the meat but for the trimmings and other stuff. People like to load gravy, cranberry sauce, and other stuff on the turkey meat. All the flavors are more balanced and contrasted when white turkey is used. Because dark turkey meat tastes richer, the other flavors don't stand out as much.
This is one reason why people still favor white pasta to whole grain pasta. White pasta goes better with sauces. Whole grain pasta is too strong and buries the flavors of sauces.
Btw, if one favors white meat over red meat, is that anti-Indian?
Rosenbaum says 'white bread' is NOTR okay but baguettes and other such stuff are okay. So, using bread as metaphor for white people, it's okay to be white as long as white identity is suppressed. Though baguettes and french bread and etc are white bread too, they are not called white bread; so, they are fashionably okay, especially for the SWPL crowd.

It's called 'pellagra' and is cured by niacin (vitamin B3). No bread is (or can be) fortified by vitamin D because it is only fat-soluble and heat-unstable.
There is an aesthetic appeal to white meat in turkey. The skin is golden brown when the turkey comes out of the oven; and when it's sliced open, there's the revleation of white meat and oozing juices. The contrast of golden tanned skin and white meat is mmm mmm irresistible. It's like finding pearl in oyster. If roasted turkey skin were white, there wouldn't be the same appeal. It's the contrast of golden brown skin and pure white meat flowing with juices when cut that makes turkey presentation magical. It is a food equivalent to Christmas tree. So, people do want a taste of that magical sight. Taste is associated with sight, which is why sushi presentation is so important. It has to LOOK good: the contrast of black seaweed, white rice, red tuna. And the interplay of colors are essential to pizza. (How long before Rosenbaum gripes about white mozzarella cheese? Gee, why not yellow cheese? Again, as with white turkey meat, pizza is loaded with so many stuff--veggies, meats, flavors, etc--that white cheese is preferable cuz it doesn't drown out other flavors. My problem with Mexican pizza is the cheese flavor is so strong that you don't really taste rest of the stuff.)

I agree completely with the anonymous that pointed out the relative difficulty of carving dark meak. Heck, my Dad pointed out that dark meat tastes better as early as 1985, and he's not even Scotch-Irish. Americans like white turkey breast because it carves in neat slice whereas dark meat pulls in chunks.

Listen Rosenbaum, I've scr**** eleven black women, so as between you and me, I'm the only non-racist here. Now, the reason we prefer white turkey meat to dark is primarily the texture. Dark meat is slimier. It's also a bit gamier in flavor, but that's secondary. People like the texture of white turkey meet. It feels good in the mouth. Health concerns may have been the reason Wonderbread lost popularity, but for me the reason was again - texture. White bread did not make for good sandwiches. It always ended up sticking to the top of your mouth. No such problem with wheat bread or pumpernickel. And for your information, no, black pussy generally is not any more fragrant than white. You're welcome.

maybe the same calories, but the white refined carbs are more volatile in the body, causing blood sugar to rise and the pancrease to crank out more insulin, which turns the glucose into fat cells, triglycerides IIRC.

All my life I preferrd white meat. Most people did, especially kids. Dark meat (chicken and turkey) was considered kind of slimy and icky and didn't have the tooth friendly texture. Fried chicken legs were ok because the dominating taste and texture was the crisp crust.
ReplyDeleteNowadays I'm less picky, but still prefer it if it is properly cooked and moist. Dark meat has more iron in it though.

Off topic, Steve, but an Empire Strikes Back moment is about to take place in Utah. The poor, put upon and powerless - as exemplified by former governor and Bush cabinet member Mike Leavitt, from his modest office at the top floor of the tallest building in downtown Salt Lake City, along with a University of Utah dean - have banded together to eliminate the Utah convention system that knocked off poor old millionaire/senator's son/Mormon prophet's grandson Bob Bennett.

A few months ago a co-worker told me that her blond grandson, about 7 years old, was taunted with the words "white bread" in school. Apparently it's a racial epithet among the young.
ReplyDeleteAt Quiznos I'm always asked by the mestizo staff "why bre, whole whee bre?" I used to pick one randomly. I still wouldn't be able to tell which is which by their tastes. I'm guessing that there is a difference, but it never seemed important enough for me to track it. But after I learned that it's a racial epithet, I started always replying "white bread." Anything else would seem cowardly now.

ReplyDeleteWhile it's true that British Imperialists were racially more purist and for that reason could be more prickly and disdainful of the people they conquered and administered, it's also true that this aspect of Britishness made the Brits less resented and hated by their subjects. Generally, British men didn't touch native women whereas French Pepe Lepew imperialists and Spanish sexual-conquistador-imperialists humped everyone in sight. So, at least when it came to womenfolk, Brits were more respectful toward natives than other European imperialists were--even if some of this 'respect' was based on British feeling of racial superiority and thus need for sexual separation.

Wonderbread equivalents are still the main element in every super market around here, and everywhere else I've been (i haven't been to the Hamptons, the ritzy neighborhoods in Manhattan, Beverly Hills, or San Francisso).
